Ingredients
6 quarts fresh sliced apples blanched
5 1/2 cups granulated sugar
1 1/2 cups Clear-Jel
2 1/2 cups water
4 cups Apple Juice
3/4 cup bottled lemon juice
1-1 1/2 boxes red hots.
Recipe instruction

Use firm, crisp apples.  Wash, peel, and core apples. (I use, Apple/Potato Peeler Corer by Spiralizer).Blanch 6 cups of apples at a time in 1 gallon of boiling water.  Boil each batch for 1 min after water returns to a boil.  Spoon out apples and keep in a covered pot so they will stay warm.  Combine sugar, ClearJel, water and apple juice in a kettle.  Stir and cook on medium high  heat until mixture thickens and begins to bubble. Add red hots.  Stir until almost melted.   Add lemon juice and boil 1 minute, stirring constantly.  Fold in drained apple slices immediately.  Fill quart size freezer bags.  Freeze.  This filling is great in apple pies, apple crisps, and apple pie filling dump cake.  Makes 7 quarts.
